Sautéed Vegetable.! This is a crunchy roasted mixed vegetable baked in oven. Healthy and easy to make recipe.! I always used to make veggie mix on pan. But today I wanted to try this oven method. So without further delay let me take you all to a quick recipe tour. I diced veggies like potato, carrot, broccoli, Brussels sprouts, asparagus , bell peppers, chili, onions, mushrooms. You can also add paneer and veggies like cabbage, cauliflower or sweet potato instead of potatoes. Then I mixed all the veggies with 2 tsp of olive oil, salt, 1 & 1/2 tbsp of chili powder, 1/2 tsp of pepper powder, 2 tsp of garlic powder, 1/2 tsp chaat masala, 1 tsp kasuri methi. Mix everything well. Add your favorite masalas if you want. Preheat oven at 400f and then in a foil tray spread the veggies and bake for 30 mins. You can also use cookie sheet or baking tray for this. After 30 mins you can see crunchy baked veggies. Another simple + yummy meal in the books 👆 . After eating out so much last week, my body has really been craving something more monotonous. So rice, greens, steamed veggies, + a lean protein have been on the rotation. My belly is already feeling so much better - and back on track, if you KWIM. 💩🙃 That’s why it’s so important to listen to your body - it’ll tell you what it wants/needs! . WHAT WENT DOWN: • instant pot chicken breasts (a quicker version of my popular “crockpot chicken” from my blog; recipe below) • @lundbergfarms sprouted brown rice (I alternate between this and basmati or jasmine rice) • @organicgirl baby spinach • not pictured: the copious amount of @cholulahotsauce that was poured on this whole shebang 🔥 . For the chicken, add 3 lbs chicken breast/cutlets to your @instantpotofficial. Drizzle with a little @chosenfoods avocado oil (or EVOO) + season with salt and pepper. Add 1/8 C water to the bottom of the pot to keep it from burning. Set on “manual”, “high pressure”, and set the time for 40 min. When done, vent and shred chicken with tongs. Let it sit in the juices for a few min before serving. 👌 . We use this chicken in so many dishes - tacos, salads, enchiladas, burritos, wraps, chicken salad, etc. It comes out perfectly every. single. time. 💯 . We’ve cooked them several ways: dusted and fried with corn meal and basam flour, soaked in a quick salt brine and fried and finally tonight we baked them with lemon and tomatoes from the garden. All were spectacular. Next time we want to try our hands at pickling them. Anyone tried this and could offer any advice? * You’ll also notice a new serving spoon we’re working on with a very simple handle. We’re closing in on an “everyday” set of utensils. Most likely we’ll refine down to one piece construction, but for now we’re testing proportions and feel. * Look out for a few of these available in our up and coming shop updates.

Y'all. Parmesan Zucchini is so so so easy to make! Quarter some zucchini and toss with olive oil, salt, and pepper. Add to a skillet over medium high heat and toss around until browned on the edges. Sprinkle with parmesan cheese and serve! Pairs well with any grilled protein or even a bolognese sauce!

BEST. sugar cookie you will ever eat 🙌🏻 They have a touch of cream cheese in them that helps keep them nice and soft and gives them some tang 👌🏻 You can roll them in some raw sugar for added crunch or duh, sprinkles. Busy day today so dinner had to be something fuss free. So my trusty friend pasta of course, that came to the rescue ! I put together the things my husband loves..penne, garlic, spinach, and jamón serrano, and dinner was done in double quick time. I threw in some black pepper and added cherry tomatoes for texture and freshness and it worked. A good dusting of parmesan added to the flavour. Who says fuss free can’t be delicious? 😉😉☺️

There is nothing like eating fish right out of the sea. This morning we went fishing off the coast of Nantucket and caught both blue fish and stripped bass. We created wonderful family memories. Our captain, Boomie, from @albacorecharters was amazing and filleted the fish so we could have it for lunch. We prepped the fish with Evov salt and pepper and baked for 8 minutes at 350 degrees. We served the fish with a salad of heirloom cherry tomatoes and fresh burrata also drizzled with #evov. The peonies are from our garden. Summer is finally here. This calls for some Zesty Cuban Mojo Skillet 🍊 Chicken. Recipe ⬇️ Ingredients 8 chicken drumsticks + 1 lb skinless chicken thigh 1 cup cooked quinoa ( follow instructions on the package) Marinade : 3 T olive oil 1/2 cup cilantro leaves 1 tsp orange zest 1/3 cup orange juice ( without added sugar) 3/4 teaspoon oregano 1 tsp cumin powder 1/2 teaspoon onion powder 2 Tablespoon mint leaves 3 Garlic cloves Salt and pepper to taste Orange wedges ( optional) Method - Add all marinade ingredients to a food processor and whizz. - Pour the marinade over the chicken in a bowl. Cover and let it sit in the fridge for 8 hours or overnight. - When ready to cook, heat a little oil in a cast iron on medium to high heat. - Add the chicken( without the marinade) and sear for 1-2 minutes. Flip and brown on the other side. Once searing is done, flip one more time and turn the heat down to low-medium heat. - Add any leftover marinade and orange wedges, cover the skillet with a lid and cook for 15-17 minutes ( flipping and turning every 4-5 minutes) until the meat is cooked thoroughly. - Toss in cooked quinoa and garnish with cilantro. Note: You can bake the chicken in the oven too at 350 degree F for 20-30 min.
