Keeping it super active while vacationing in California: 1. You absolutely do not have to workout on vacation, we have been getting plenty of movement in via hikes, swimming, and walking about the cities without the gym, but we did make a stop today to the gym. Moving my body keeps me sane & feeling me best! Plus, there are tons of new workouts we’re trying in CA🤩 2. We’ve been keeping it cheaper and fun by cooking 2 meals a day in our Airbnb. I love knowing the ingredients going into my food and fueling my body with whole and fresh fruits, veggies, and protein sources- plus there is so much fresh produce!! 3. Enjoy yourself! Don’t stress about it too much while you’re traveling! For me, that means ice cream for lunch tomorrow at my all time favorite place @thebakedbear 😍

VEGAN CHOCOLATE PEANUT BUTTER CUPS 🌱🌱🌱🌱 Vegan chocolate peanut butter cups that taste like Reese Peanut Butter Cups?? Sign me up. If you’re a Reese Peanut Butter Cup lover, you’re going to love this simple vegan version of the chocolate favourite! You only need a few ingredients to make these and they’ll be ready before you know it. 🌱🌱🌱🌱 INGREDIENTS Chocolate: 2 x 1/4 cup melted coconut oil 2 x 3 tbsp pure maple syrup 2 x 1/4 cup cocoa powder Peanut Butter Filling: 1 cup natural peanut butter 2 tbsp coconut oil 1 tbsp maple syrup 1/4 tsp sea salt 1 tbsp + 2 tsp nutritional yeast 🌱🌱🌱🌱 INSTRUCTIONS * Mix together the first set of melted coconut oil, maple syrup and raw cocoa powder in a bowl. * Spoon about 1/2 tbsp-1 tbsp into the bottom of muffin cups, it should make 12 large cups. * Place in the freezer for 10 minutes. * Mix together the ingredients for the peanut butter filling in a bowl. Mix well until it’s smooth and the nutritional yeast is mixed in completely. * Remove the chocolate cups from the freezer and spoon the peanut butter filling into each cup. It should be about 1 heaping tbsp/cup. * Place in the freezer for 20-30 minutes or until hardened. * While the peanut butter is setting, mix together the second set of chocolate ingredients. Including myself after pulling a 20-hour day yesterday which you guys saw on my story and two nights on less than 5 hours sleep I am exhausted. Tonight I didn’t EVEN want to workout and it turned out to be my best HIIT yet! I superseded goals by hitting 38 splat points ( @noeliaimani 38 splats in 60 minutes!) in the 60 minute session while not going above 168 peak HR! Proof that even if you feel like you may not be able to give it your best, do it anyway.

Yesterday my dog chewed through my brand new @bissellclean vacuum. Today my sink exploded and burned me with hot water. Maintenance didn’t come and I can’t wash my dishes. I’m in between a rock and a hard place on a paper that I need to do well on and it’s due tomorrow. I have about 4 job applications due Sunday that all need separate cover letters. It has been a WEEK of having my patience tested and filled with anxiety about everything else going on in my life right now. But we’re charging on.
