Soon after Zai was born, it was obvious he was highly sensitive. Sensitive to almost everything from chemicals in household products, to foods containing dairy, wheat, eggs, soy, and so many other things we never even figured out. Despite being a healthy, happy, bouncing bundle of joy, he was also a squirmy, wheezy, writhing, itchy baby for the first two years of his life. It was a heart-wrenching experience for me as a first-time mama. I felt stuck in food-pyramid hell where it was seemingly impossible to provide my baby with the 'right' nutrition he needed based on what little he could eat.
I felt so responsible. I did a lot of research. I figured out a lot. Consequently, I trashed the food-pyramid and revolutionized the way we eat. Everything self-cured and healed. I felt like I'd cracked an unsolved mystery.
I've continued doing just for fun research about food, nutrition, and the connection of mindful eating to health, wellbeing and healing. It's my love. We've cut out all the nasties from our diet and have not had a single visit to the doctor's office for well over a decade now – none of us. Sure, we pay more for organic foods now, but we don't spend a single cent on health insurance, doctors or medication. We're growing more and more of our own food now. It works out to costing a lot less.
I switched to a vegan diet a couple of years ago. Just me at first. When I mastered all there was to know about plant-based nutrition and cooking delicious vegan dishes, the entire family eased into it. We've never looked back.
Contrary to popular belief, we've had absolutely no issues at all linked to any lack of protein, iron, calcium or B12, because truth be told (gasp) there is no shortage of any of them in a balanced plant-based diet that incorporates home grown veggies and sea plants.
This is how we eat. Why? Because we care. We care deeply about the planet, about animals, about people, yes, and ourselves.
