Long time, no see! We spent 6 long days harvesting and processing our 3 pigs and they were our biggest yet: 290, 330, and 340 for a total of 960 pounds of beast that my husband and I man-handled without the use of equipment. If you have ever tried to budge over 300 pounds of dead weight in the mud, you haven't lived 😩 We have now harvested 16 pigs ourselves here on our farm, and it is still one of my most favorite things to do (I should have been a butcher I think). Our butchering week was eventful and included (but not limited to): (1) a new pully system that failed us 3 separate times where the cable that we used to hoist and lower these monsters for scalding jumped off the pully, one time while the pig was in the water 😬 (2) my husband split his head open (3) a lamb nearly strangled herself to death in our electric netting, (4) an ER visit for me due to a bad reaction to medication. 💆 And after all this fun, we immediately left for a long overdue visit with my in laws for 4 days. Now that I am back home, there's bacon and hams and a whole lot of sausage making to do. I have a bunch of videos that I will be going through to share on the butchering process for those interested, they will be in my stories this week. 🐖 I hope you are all doing well!
