Omg, you guys won’t belief what I’ve just done. Another awesome way to use up #Pho broth. So I cooked a big pot of Pho over the weekend, with lots of cinamons, star anises, ginger, onions and pork bones. The broth was so good even when we have eaten all the noodle and beef, I just couldn’t throw the broth away. So I thought perhaps I could use the broth to cook some quinoa. And OMG, it turned out great! My bowl today consists of some Pho-flavored Quinoa, sauteed spinach and mushroom and spicy roasted sweet potato. While you're planning your day tomorrow here is a recipe you can try for dinner. Skinny Shrimp Scampi w/ Spinach You don't need tons of butter for flavor or loads of pasta to enjoy this meal. I used both but just in #moderstion. Butter is actually not bad for you if you're just having a 1-2 tsp a day considering the amount of other butters (nut) or oils used in the day. Ingredients: 2 lbs of shrimp 4-5 cloves garlic 1 tbsp butter 1/2 lemon 1 tbsp red pepper flakes 2 tbsp fresh parsley 1 tsp salt 3 cups of spinach Fresh Grated Parmesan Cheese (optional) Brown Rice Pasta - Pad thai style or fettuccini I peeled the shrimp completely but if you prefer tail on that is fine also. I don't like to take time away from eating to peel it off lol. I seasoned my shrimp overnight with the minced garlic but if you're press for time than just season right before you put into pot. Directions: 1. Melt butter in sauce pan 2. Add seasoned shrimp 3. Add salt and cook for about 3 min 4. Add parsley and red pepper flakes 5. Squeeze juice from 1/2 lemon and add to pot 6. Cook for another 5 min, until shrimp is no longer looking raw 7. Add spinach and cook for 1 min then turn off. The spinach will wilt from the remaining heat in pot. 8. Today was one of those days where I didn't get a chance to go grocery shopping and I literally only had a tomato 🍅 some spinach 🌱and a lemon 🍋in my fridge. Thankfully my pantry was stocked with some staple items that helped me create this delicious, nutrient dense, vegan lunch. 👌🏼 . . . For this yummy lunch bowl I used a can of garbanzo beans, a whole chopped tomato, a scoop of olive tapenade, a scoop of pine nuts, the juice of one lemon, drizzle of olive oil , garlic salt and pepper, and a handful of spinach on the side. 🤤 . . . The best part of these types of meals is that they are perfect for work or school because they get even better as they marinate. 🙌🏼 . . . Here are some items I always try to have on hand for days like today: 🌿canned items: garbonzo beans, black beans, kidney beans, green beans, corn, beets . 🌿jars of marinated artichokes 🌿jars of olive tapenade . 🌿sundried tomatoes 🌿nuts . . .
