Quick and easy lemon paleo cookies πŸ‹ . . . Ingredients: 1 lemon zested and juiced, 1/4 cup maple syrup, 1 cup almond flour. Alright the people have spoken so here it is! Twice baked potatoes: 2 russet potatoes 1/2 can of full fat coconut milk 1/2 onion diced 1 can of artichoke hearts How ever much spinach you would like 1-1/2 tbsp garlic powder 1 tbsp olive oil Seasoned salt, and pepper to taste. 1. Preheat oven to 400 degrees 2. Microwave potatoes 3. Heat a medium sized pan with 1tbsp olive oil, once heated sautΓ© onions 4. Add artichoke and spinach to sautΓ©d onions 5. Remove from heat add to mixing bowl 5. Scoop out potatoes into mixing bowl saving the outer skin 6. Mix potatoes, spinach mixture, coconut milk, salt pepper and garlic 7. Fill potato skins, bake for 15 min. 8. Snack time is the best time. Today I wanted all the sweets so I made these. . . For the crust: - 10 dates - ** 3/4 cup of almonds 1. Soak almonds and dates for an hour in water. 2. Put in food processor. Blend till combined. 3. Made in to little balls then press flat makes about 10 mini crusts. Toppings: - about 1 tbsp fat free vanilla Greek yogurt for each tart - fruit for topping - drizzle honey. EAT UPPPPPPP . ** you are supposed to use cashews but I’m allergic.
