MEXICAN Q U E S A D I L L A S 🇲🇽 🧀 .
My favouriteeeee on plan (syn free) meal by a mile 😍. I usually have this every Friday as a ‘treat’, even though it’s completely on plan. Mexican is by far my favourite food, and the fact I’m able to eat it whilst losing weight makes me extremely happy 😛 .
My quesadillas are syn free using both my healthy extras. I cook my 5% mince, adding a few spices like paprika and a dash of Worcester sauce (if I have chipotle paste in the house, I’ll also put a tsp in for 1 syn).
I then put a WW wrap (hex b) flat on a plate and measure out 30g Cheese 🧀. I cover one side of the wrap with cheese, adding my onions/peppers or any other veg I’m using (sometimes none as I love the full flavour of the mince and cheese) 🇲🇽 I then cut the quesadilla in half, put it in a frying pan with fry light for a few mins each side (be careful when flipping - it can get messy! I use a plate to put on top of the frying pan flip it over and keep my ingredients inside the wrap) The frying gives it that crispy and real Mexican feel! The cheese melts inside and it is delicious 🤤 .
I then serve it with some rice and of course, 0% Fat Greek yoghurt to for the “sour cream dip” (it tastes exactly the same!). 🌮 .
