🙋🏼‍♀️Calling all mamas & smalls who love = 🍌+🍫+ ğŸž We’ve got an AMAZING Banana Bread recipe up on the “Mommy Diaries” thenakedparent.com . . Psst....It’s also GF & Paleo too 🙌🏻👊🏻 . . . If you love banana bread, (and who doesn't love chocolate?) then you will love this recipe. Ingredients 2 bananas + 1/2 for topping (I never put any on top, I tried once and they got super soggy and gross!) 3 eggs 1/4 cup almond butter 3 tablespoons coconut sugar 2 cups blanched almond flour (I just used almond meal, it was all I could find! and it worked great!) 1/4 cup cocoa powder 3 teaspoon baking powder 1/2 teaspoon sea salt 1 cup dark chocolate chips (or regular chocolate chips works too) Preheat oven to 350 degrees. Prepare a bread pan by oiling it with coconut oil (or whatever you have on hand). Mash the bananas in a large bowl and then whisk in the eggs, almond butter, and coconut sugar. Add the almond flour, cocoa powder, baking powder, and sea salt to the wet ingredients and whisk until it’s combined. Then fold in the chocolate chips (if you want, save some of the chips for on top of the bread!). Pour the batter into the prepared pan, and if you want, sprinkle the rest of your chocolate chips on top, as well as the cut up banana if you decided to do so. The recipe says to bake for 40 minutes, but I find it is about 45 or so before a toothpick comes out clean. Es kue / es gabus / es wadai Oleh @konicasumitro Bahan: 180 gr tepung hunkwe 1 L santan sedang 5 sdm gula pasir (tergantung selera aja, saya kebetulan nggak suka manis) Garam secukupnya Pewarna makanan Plastik kaca • Cara membuat: 1. Campurkan santan, gula pasir, garam dan tepung hunkwe dalam satu wadah, lalu aduk hingga rata. 2. Bagi menjadi 3 adonan, beri masing-masing warna (saya pakai warna pink, kuning dan hijau). 3. Masak 1 bagian adonan (pink) dengan api kecil dan masak hingga adonan meletup-letup, matikan api ketika adonan sudah terasa berat saat diaduk tapi masih bisa dituang. 4. Tuang adonan pink ke dalam cetakan yg telah dialasi plastik tebal, ratakan lalu sisihkan. 5. Sementara menunggu lapisan pink dingin, masak adonan berikutnya hingga meletup-letup. 6. Kemudian tuang diatas adonan pink. 7. Begitu jg dengan adonan warna hijau. 8. Biarkan adonan padat di suhu ruang selama kurang lebih 30 menit. 9. Lalu masukkan adonan ke dalam kulkas (bukan freezer) selama kurang lebih 15 menit agar adonan mudah dipotong. 10. Potong adonan tipis-tipis lalu bungkus dengan plastik, dan masukkan ke dalam freezer hingga beku. 11. Es kue/es gabus siap disajikan. . . I’m 0% German but 100% invested in Oktoberfest especially when it comes to the food. this Beer Cheese Dip recipe is one of my specialities for Oktoberfest. here’s how to make it: 1. In a medium saucepan, add one beer of your choice (an amber or pumpkin ale work great) and heat it over medium for 2 or 3 minutes. 2. Add 8 oz. cream cheese cut into chunks, 16 oz. shredded sharp cheddar, 1 teaspoon Dijon mustard and 1/2 teaspoon paprika. Whisk until smooth 3. Lower heat to medium low and simmer for 15-20 minutes whisking often until visibly thicker 4. In-betweeny work, the sudden cold weather, wedding planning and PMS, I finally made something I had in my mind for a long time: Allspice Pumpkin Cheesecake!! •I grew up seeing my grandma baking, and one of her signatures desserts is cheesecake (no one makes cheesecake better than abuela!). Using her recipe as inspiration (but not giving her secrets away 😏) here you have a healthier version influenced by the season: 🍂fall! even though feels like winter already 😩. (I’m not ready for that!) Anyways, Let’s do it! 👩🏻‍🍳 . . . Ingredients: •Crust #grainfree #glutenfree -1cup organic unsalted nuts (i used: pecans+almonds+walnuts) -6 organic dates -2tbs organic unrefined coconut oil -pinch of organic cinnamon •Filling -8oz organic pasture raised cream cheese -2 organic pasture raised eggs -1/3 cup organic maple syrup -1 cup organic pumpkin purée -1/4 tsp organic allspice (ground) -1 tsp organic vanilla extract . . Directions: Preheat the oven at 350 degrees. Using coconut spray, grease a 9x13 round pan, set aside. In a food processor, blend the nuts, pitted dates, coconut oil and cinnamon until you create a “sticky dough” that will be the crust for the cheesecake. Using your hands place the crust in the pan and push it down with your fingers making sure all the base is covered. Set aside. In a blender add the cream cheese, eggs, maple syrup, vanilla extract, allspice and pumpkin purée and mix on mid-high speed until everything is smooth and well combined. Pour the filling in the pan over the crust and bake for 40-45 minutes. Once done, let it cool completely. Top it with more “caramelized” nuts, or coconut cream or just eat it by itself; I promise it’s that good! Enjoy!! 😋

Have a great one✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowl Deets👇🏼 ▫️1 1/4 cup Unsweetened Almond Milk ( @lovemysilk ) ▫️1/2 cup Old-Fashioned/Rolled Oats ( @quaker ) ▫️1 tbsp Poppy Seeds ▫️1 tbsp Chia Seeds ▫️2 Plums, cubed ▫️1 tbsp Honey ▫️1/4 tsp Cinnamon ▫️1/4 tsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by bringing 1 cup of the almond milk to a boil. Once boiling, add in the rolled oats & both the Poppy & chia seeds. Make sure to stir quickly & frequently. 🍂 Fall Pumpkin Banana Bread ⏲ 20 mins Prep Time | Yields 1 Loaf (12 Servings) I haven’t baked in a while & so I thought I’d make some ooey-goey Banana Bread with some Pumpkin thrown in 👌🏼 Gotta say, I am enjoying all these Fall flavors 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wet Ingredients: ▫️2 ripe Bananas ▫️1 cup Pumpkin Purée ▫️2 Eggs ▫️1/3 cup Coconut Oil ▫️1/3 cup Honey ▫️3 Dates ▫️1 tbsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients: ▫️2 1/2 cup Whole Wheat Flour ▫️1 tsp Baking Powder ▫️1 tsp Baking Soda ▫️1/2 tsp Salt ▫️1 tsp Cinnamon ▫️1 tsp Nutmeg ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Extras: ▫️Chocolate Chips ▫️Walnuts ▫️Pumpkin Seeds ▫️Pumpkin Seed Butter ( @dastonybrand ) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 350*. In a food processor, combine all the wet ingredients. Pulse until creamy. Pour out into a mixing bowl & add in all the dry ingredients using a sifter. Mix in everything well, making sure that there are no lumps. Fold in chocolate chips & walnuts. Line a 9x5 baking dish with parchment paper. (This makes it easier to pull the bread out). Pour out the batter & spread evenly. Top with walnuts, pumpkin seeds, & chocolate chips for extra crunchiness 😋 Bake in the oven for 45 mins or until the center is toothpick ready. I’m so excited for this cold front! ❄️ Brought in some cold temperatures for the week & I’m bringing out the big {fall, cozy, food} guns. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowl Deets👇🏼 ▫️1 tbsp Coconut Oil ▫️1/2 medium Onion ▫️2 cloves Garlic ▫️1 tsp Ginger ▫️1/2 large Zucchini ▫️2 cups Cauliflower ▫️1/2 can Chickpeas ▫️Frozen Peas ▫️1 cup Crushed Tomatoes ▫️1 cup Unsweetened Almond Milk ( @lovemysilk ) Seasonings: ▫️1 tbsp Curry Powder ( @wholefoods ) ▫️1 tsp Smoked Paprika ▫️1 tsp Turmeric ▫️1/2 tsp Cumin ▫️Salt & Pepper, to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by heating up a pan with coconut oil & sautéing the onions, garlic, & ginger for roughly 2-3 mins. Then add in all the seasonings. Add in your liquids - crushed tomatoes & milk. Then add in all your veggies - zucchini, cauliflower, chickpeas, & frozen peas. Mix & then simmer, covered, for roughly 15 mins. I served mine with some of my favorite cauliflower rice ( @greengiant ) & added in some purple cabbage & green onions as garnish!

🍳 Veggie Baked Shakshuka ⏲ Under 20 mins | Serves 2 I’ve been wanting to make some shakshuka for sooo long & I finally gathered all my ingredients & made it this morning. Definitely worth it 👌🏼 Will he making this more often! Quick, easy, & minimal clean up 😊 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Skillet Deets👇🏼 ▫️1/2 Onion ▫️2 cloves Garlic ▫️1/2 cup Corn ▫️1/2 can Chickpeas ▫️2 handfuls of Spinach ▫️2 cups Crushed Tomatoes ▫️4 Cage-Free Brown Eggs ▫️Seasonings - Chili Powder, Smoked Paprika, Red Crushed Pepper, Cumin, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 350*. In a cast iron skillet, start off by sautéing the onions & garlic. After 3-4 mins, add in the corn & chickpeas. Cook for a few more mins before adding in all the seasonings. Then, add in spinach & the crushed tomatoes, evenly mixing everything in. Using a spoon, create 4 small holes & crack open eggs. Place the skillet in the oven & bake for 10 mins, or until the egg whites set. (If you aren’t using a skillet, cover the pan & simmer for 10-15 mins.) ğŸŽƒ Pumpkin Cardamom Pasta ⏲ Under 15 mins | Serves 4 Had a tiring day today & I was in need of a quick yet delicious recipe! The other week I was at @wholefoods & ofc there’s Fall at every corner! I found this Pumpkin Cardamom Pasta Sauce & I knew I had to try it! I have also been eager to try the Banza Chickpea Pasta & boy that stuff is yummy! Perfect combo for today too as it was finally in the 60’s! 🌡 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowl Deets👇🏼 ▫️Rotini Pasta ( @eatbanza ) ▫️~2 cups Pumpkin Cardamom Pasta Sauce ( @wholefoods ) ▫️~1/4 Onion ▫️2 cloves Garlic ▫️3 handfuls of Spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀ First, boil some water in a pot & cook the chickpea pasta for roughly 8-10 mins. While that is going, slice your onion & mince garlic (I use a garlic press cuz I’m lazy 💁🏽‍♀️). In a sauce pan, sauté the onion & garlic for about 5 mins before adding in the spinach. One the pasta is cooked, transfer to a colander & rinse under water. In the empty pot, add in the veggies, sauce, & pasta. Stir for a few minutes on medium to low heat. 🍕 Beet Crust Zucchini Pizza ⏲ Under 30 mins | Serves 2 So I was planning on buying some more cauliflower crust pizza from @wholefoods but found this beet crust pizza & I just had to try it! Happy #HumpDay ! 🐪 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️Beet Crust Pizza ( @365bywholefoods ) ▫️Roasted Garlic Pizza Sauce ( @365bywholefoods ) ▫️Mozzarella Cheese, shredded ( @kraft.naturalcheese ) ▫️1/2 large Zucchini ▫️1/4 Onion ▫️2 cloves Garlic ▫️Few Cherry Tomatoes ▫️3-4 leaves of Fresh Basil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 425*. Start off by slicing the zucchini in have & then cutting them in half-moon shapes 🌙. Thinly slice the onions & use a garlic press for the garlic. In a saucepan, add in avocado oil & sauté all the veggies for roughly 10-15 mins (or until the onions are translucent). Layer the beet pizza crust with some pizza sauce & then shredded mozzarella cheese. Top with the zucchini mixture. Slice up the cherry tomatoes & add to the top. Lastly, chop up some basil & sprinkle over the top. Cook in the oven for roughly 8-10 mins. I cooked it directly in the grills instead of place it in a baking dish so the bottom could get nice and crispy 😋. 🍲 Veggie Stir Fry Noodles ⏲ Under 30 mins | Serves 3-4 Lately I’ve been in the mood for some stir fry/chow mein noodles & I’ve had these super low cal tofu shirataki noodles in my fridge for forever so I thought I’d finally make use of them! Turned out great & it’s filled with some delicious veggies. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my bowl🥡 ▫️2 packets of Tofu Shirataki Spaghetti Noodles ( @housefoodsamerica ) ▫️Sauce (ingredients below) ▫️1/4 Onion, sliced ▫️Frozen Corn ▫️Carrots, shredded ▫️Frozen Peas ▫️Half Bushel Broccoli ▫️Purple Cabbage, shredded ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sauce Deets👇🏼 ▫️3 cloves Garlic ▫️1 tsp Ginger ▫️1/3 Low Salt Soy Sauce ( @kikkomanusa ) ▫️1 tbsp Sesame Oil ( @kikkomanusa ) ▫️1 tbsp Rice Vinegar ( @kikkomanusa ) ▫️1 tbsp Honey ( @365bywholefoods ) ▫️1/2 tbsp Sriracha Sauce ( @huyfongfoods ) ▫️2 tbsp Tahini ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sauce - To make things easier, I like to just mix everything in a food processor since I hate chopping garlic & ginger. So add the two to a food processor & pulse until fine. Add in remaining ingredients & blend. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the noodles, start off by opening both packets in a colander & thoroughly rinsing them off in water (they have a funny smell but it goes away easily). Then, boil them in water for roughly 5 mins. Move back to colander & let it sit to drain out the water. Prepare all the veggies & then in a large pan, cook them in some olive oil for roughly 10 mins. Once the veggies are cooked, add in the noodles. Mix & then lastly, pour in the sauce. Evenly mix everything together. 🍍Green Pineapple Smoothie Bowl ⏲Under 10 mins | Serves 1 Smoothie bowl Sunday time! Experimented with a random recipe this time & I gotta say, it’s probably one of my favorites now. It may be Fall for some of you guys out there but it’s currently mid 80s with super sunny skies here in Texas, so aka 90 degrees & humid. So green tropical smoothie it is for breakfast👌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowl Deets🥥 ▫️1 Frozen Banana ▫️1/4 cup Frozen Mangos ▫️1/3 cup Frozen Pineapple ▫️Small handful of Spinach ▫️3/4 cup Coconut Water ( @vitacoco ) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend everything together & top with frozen pineapple chunks, shredded coconut, & hemp seeds.

🍳 Zucchini & Sweet Potato Hashbrowns ⏲ Under 15 mins | Serves 2 Enjoying this delicious breakfast on this beautiful Saturday morning☀️ Feels good to finally be able to sleep in! My body has been drained since the cruise & finally I got to sleep in & cook some yummy breakfast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hash-brown deets👇🏼 ▫️1 medium Zucchini ▫️1/2 medium Sweet Potato ▫️Olive Oil ▫️Seasonings - salt & pepper, chili powder, garlic powder, cumin, smoked paprika ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by grating both the zucchini & sweet potato into a bowl. Add in some salt & let it sit for 15-20 mins to drain out any excess water. Once that’s done, transfer to a towel & wring out any remaining water. In a mixing bowl, add in the hash-browns, olive oil, & seasonings. Heat up a waffle iron (I used my mini waffle iron from @unprocessyourfood ) & transfer the hash-browns to the iron. Cook accordingly or until brown & crispy. Serve with a sunny side up egg, sliced avocado, & cooked spinach. Season with sesame seeds, salt & pepper!
