My beets are getting bigger and more robust so it was time to give them a haircut! I used the beet tops in my “soup of the week”. This week it is spicy Italian sausage, sweet potatoes and beet greens soup and my hubs LOVED it so much, he’s eaten 2 servings in 3 meals! 🤣😳 Nutrition facts: rich in antioxidants, high fiber, high in vitamin B6, magnesium, potassium, copper, and manganese, and low in fat and cholesterol. Win! Win! Win!
