Veganuary day 17. Yesterday we had some purple cabbage with every meal. It is in season here in Taiwan and I have found it in my favorite organic store. For breakfast we had it in a peanut sauce with some oven baked potatoes and fresh tomatoes. For lunch and dinner I sautéed it in an almond butter - soy sauce dressing. Was so delicious. Also jujube is in season - a crisp and sweet green colored fruit with a seed inside. Looks like a big, green plum. It is really tasty too. Not the prettiest presentation, but it’s a quick and easy salad made with some left over roasted purple cabbage, tomato, avocado, half a head of lettuce, and some homemade shallot vinaigrette(one shallot, olive oil, red wine vinegar, sea salt, and oregano)! I’m always amazed when I go to the farmers market and find such a vast array of colorful fruits and vegetables. ✨ If you asked me what my top ten food staples were, purple cabbage would be on the list. It’s been a few years now that I’ve always kept some on hand. The color brings life to any dish. ✨ It’s purple color comes from a high antioxidant level of anthocyanin. It also carries vitamin A and C, magnesium, and fiber. When cooked, the vitamin and mineral capacity decreases but the antioxidants are more easily assimilated. I like it both ways. ✨ Try it sautéed with sesame seeds, red pepper flakes, and coconut aminos - it’s like candy!
