With an abundance of chillies, capsicum and tomatoes atm, I figured it was time to make a relish!🌶🍅🌶 This mixture made up a 500ml jar and is super spicy! Sterilise your jar beforehand and this should store unopened for 12 months. You can alter the amount of chilli to suit your own taste, or omit them all together and add more capsicum and tomatoes!👍 To make, place the following into a large saucepan; *600g diced capsicum(I used our red mad hatter variety) *250g diced tomatoes (our beefsteaks cooked down beautifully) *80g chillies (That was a lot of birdseye's!) And add a pinch of salt. Stir over medium heat until starting to soften, then add; *approx. 1/4 cup raw sugar *1/2 cup apple cider vinegar Let this simmer for around 45mins with the occasional stir. Use your potato masher and give the mixture a good mash in saucepan. Simmer for another 5 or 10 minutes, or until it reaches a more jammy consistency. Hello most perfect loaf of bread I have ever made! This lovely loaf is a combo of a rye based sourdough starter, whole wheat, spelt, and white flour. Since my starter still is a bit of a babe I added just a small pinch of commercial yeast to help with the rise. ____ I have always enjoyed baking bread but have never quite mastered the perfect loaf but it seems like having my new banneton and using the cast iron pot cooking method is helping out. ___ Do you enjoy making bread? Basswood/linden flowers and leaves rolled out, pressed, massaged, lightly salted, pounded and left to oxidize for a bit before fermenting into a floral laphet (sour fermented tea leaf). Once fermented, the leaves will be blended with oil, garlic, and chiles, and tossed with peanuts and fried lentils. This little jar is already producing a good level of acidity and it’s still got a good while to “sweat” in the sun. These basswood blossoms have been so interesting to play around with. They smell like honey and fresh linen with a little vanilla. 梅仕事の最後は煮梅です。毎年これが一番大変で、そして一番出来上がりが楽しみ。今年は3キロ煮ました。 ・ 青梅を針でまんべんなく刺し、塩水に一晩漬けてアク抜きします。塩抜きするため、翌日梅を流水で4時間位さらし、さっと湯がいてまた一晩水にさらします。 最後はみつを煮て冷ました中に梅をそっと入れ、沸かさないように静かに30分煮て完成。 ここまで3日かかっています(^_^;) ・ 完成した煮梅は煮汁ごと容器に入れて、冷蔵庫で保存。余った煮汁はそのまま梅シロップになります。最初は皮が破けたりしていたのですが、毎年煮るうちにコツがつかめて来て、今回は3キロ煮て、皮が破けたのは3個でした😊 ・ I made a ume (Japanese plums ) compote. This is the last preserve of this year’s harvest. It took three days to make them, because they need special preparation. So a few people, on trade and off, have asked me how I went about making my Bread 'n' Butter Cordial for the @slanewhiskey SuSlaneability competition, and I figure that if I make this information open and share how, then it's possible more good can be done regarding zero waste. Even if one other person has a go, it's a worthwhile project to tackle food waste! So... 1) Gather stale bread from Baker's, cafés, shops etc (if you ask if there's anything that foodbanks didn't want or need, they'll tend to give it for a very reduced rate. See if you can find a variety of different breads. Heavily toast the bread until almost burnt, then masserate in water for 4 hours (One and a half litres to One large loaf, obviously adjust depending on size). 2) After 4 Hours, fine strain your bread infused water and make sure to squeeze everything from the bread pulp. I gave the left over bread pulp to a local farm and a friend who owns pigs, for food and compost! Then, after straining, add the liquid to a pan a litre and a half at a time, bring to a boil, kill the heat to a low/medium simmer and begin to take out any scum/froth/skin that forms. Reduce to a 1/3 or until a deep nutty brown. 3) For every 300ml of your now syrup like bread reduction, add 300ml of Tea (I used spent teabags to brew the tea), 70ml Citric acid 1:10 (To avoid citrus overuse), 15 Dashes of Teapot Bitters and 200ml of locally sourced milk. Let curdle and treat as milk punch. Strain through curds until clarified (it won't ever be crystal clear due to the bread, but you will still achieve good results). 4) Fat wash half of your punch with locally sourced butter (1 part butter to three parts mixture). Leave for 4 hours, set and then strain/filter. (I gave my left over butter to the kitchen for finishing Roast Potatoes this Sunday, they're awesome). 5) Add your fat washed punch to the other half. Filter again. Adjust the mixture with local sea salt (if possible) and acid until bright, rich, but not too acidic. Batch to 50ml of Slane, to 60ml Cordial, to 10ml of water and fridge to avoid water wastage. Sooooo we were hoping to share some of our corn this year, but our first patch has been our only one to thrive and we will be keeping what we harvest here for us(roasted corn & pickled baby corn!🌽🌽🌽) The deer were able to eat our second plantings of corn & beans before we were able to high fence the new gardens (because ya know LIFE happens) and they decided to pig out on our hot pepper & sweet pepper patches too, womp, womp, womp......🦌🎯👨‍🌾 . . . So, this next week, we will be finishing the high fence, replanting corn & beans, another round of cukes & melons, the last of the Winter squash and then "patiently" waiting on our Peppers to catch back up👩‍🌾

In the fall this shelf (the empty #masonjar shelf) is completely empty and as the winter rolls on, it slowly fills back up. I love seeing the empty jars and knowing they all contained good #homemade food that sustained us, and now they are just waiting to be put to use again. Some of my jars have been in use for decades.
