Many people eat less vegetables because they don't like their taste. Well, it can get quite boring and discouraging to eat them plain and prepared the same way all the time. You'd be surprised by how much adding flavour helps not only to enjoy them more but also to experiment and try new vegetables and combinations. We had raw brownie bites left over from our choc açai bowls last week, which calls for... CHOC FUDGE BROWNIE BOWLS (obviously 🤷🏻‍♀️ 😂) . . So, here we have it. Choc fro-yo nice cream, laced with raw brownie bites and a big ol’ swirl of @mindfulbitesuk Brazil Nuts and Cacao Nibs Butter (FYI we have zero affiliations with @mindfulbitesuk , we just LOVE their nut butters). Topped with fresh bluebs, chopped hazelnuts and pecans 🤤 . . RAW BROWNIE BITES . Ingredients: 1 cup nuts (we used a mix of cashews, walnuts and hazelnuts) 1 packed cup dates 1/3 cup cacao powder Method: 1️⃣ Blend the nuts until chopped as finely as possible 2️⃣ Blitz in the cacao powder until fully mixed. 3️⃣ Add the dates and blend until all broken down. 4️⃣ Roll into approx 16 balls, we use a tablespoon measure to ensure equal sizes (although it doesn’t matter much for the brownie bowl as you’ll be breaking them up again!). . . CHOC FRO-YO NICE CREAM . Ingredients: 5 bananas, frozen 5 tbsp raw cacao powder 2 small dates 4 tbsp coconut yoghurt (we use @coconutcollab ‘Natural’) . . Creamy Red Curry with Veggie Gyozas by @alexafuelednaturally 💥🌱 A belly-warming dinner perfect for the winter months! Recipe Ingredients⠀ 1 yellow onion, diced ⠀ 3 garlic cloves, minced⠀ 1 inch fresh ginger, minced ⠀ 1 tbsp coconut oil ⠀ 1/2 tsp salt⠀ 1/4 tsp pepper ⠀ 1 cup broccolini, chopped⠀ 1 container tofu, cubed⠀ 1 red bell pepper, chopped small⠀ 6 cups filtered water + 1 tbsp bouillon paste (or 6 cups vegetable broth)⠀ 2 cans coconut milk ⠀ 1 tbsp soy sauce⠀ 4 tbsp red curry paste ⠀ 1 tbsp 100% pure maple syrup ⠀ 1 tbsp Sriracha (optional)⠀ 1 bunch cilantro, for garnish ⠀ Store bought vegetable gyoza or homemade⠀ ⠀ Method⠀ 1. In a large pot over medium to high heat melt coconut oil then add diced onion, minced garlic and minced ginger. Sauté all together for 5 minutes. Season with salt and pepper for 5-6 minutes then add chopped bell peppers, tofu, broccolini & sauté for 7 minutes, stirring as it cooks. Add vegetable broth, coconut milk, soy sauce, curry paste, maple syrup and stir. Bring to a simmer and cook for 10 minutes or until vegetable are tender. ⠀ 2. In a blender carefully spoon 4-5 cups of broth and the red bell pepper to the blender. Blend on high for 1 minute then pour back into pot. Stir and let simmer for an additional 5 minutes.⠀ 3. Make gyoza according to the directions on package or if you’re following my recipe for homemade gyoza follow the directions accordingly. ⠀ 4. Serve hot with rice, a squeeze of lime, garnish with cilantro and top off with cook gyozas. Good morning guys :) Really often people ask me, what I am "allowed to eat" as a vegan. That they don't have the time, or the money to change their diet to a plant based one. 😬 But honestly, it's no miracle or magic to go vegan. It's so easy, because vegetables and fruits are given to us by earth, they are not new invented by some crazy vegans. 😉 Using these natural gifts is no big effort, not expensive and not uncool or something like that. 😁 Yesterday evening I thought I had nothing to eat at home, but then I found one tomato, three pieces of bread and a sip of cashew cream which was left from the day before. I put the cream, some spices and the tomato on the toasted bread. Jackfruit Curry with rice by @earthofmariaa 🔥 Jackfruit flesh is super nutritious, and fantastic for curries and stews! Recipe 🌱 Ingredients:⠀ 1 small onion, chopped⠀ 1 clove garlic, minced⠀ 1 can canned jackfruit in water⠀ 100g mushrooms, chopped⠀ 1/2 can coconut milk⠀ 1/2 can tomatoes⠀ 1 tbsp tamari⠀ 2 tsp curry powder⠀ 1 tsp turmeric⠀ 1 tsp garam masala ⠀ Rice or noodles, to serve⠀ ⠀ Instructions:⠀ Add the onion and the garlic to a non-stick saucepan and sauté for around 2 minutes, until fragrant. Then, pull apart the jackfruit using your hands or a fork and add it to the saucepan, sautéing for around 5 minutes. Then, pour in the coconut milk, tomatoes and tamari, together with the curry powder, turmeric and garam masala. Lower the heat and simmer, stirring occasionally, on a low-medium heat for around 10 minutes. Delayed post but dinner last night was amazing😁 I made @bosh.tv fully loaded potato nachos ! With vegan quesadillas✨ // The potato nachos are basically thinly sliced potato, cooked in spices then layered with beans, tomatoes and vegan cheese inbetween. Then you bake this in a dish, top with guac and salsa😍 It was amazing if I do say so myself, so cheesy and delicious, me and my boyf nearly devoured the whole thing but managed to save some for tomorrow night🍽 This took a while as it was quite a few steps and I was worried it wouldn’t be worth it but it 100% was!🌱 (last pic is without the sauces so u can see the layers) // The quesadillas had a mix of sweetcorn, kidney beans, peppers and red onion w cumin, placed in the wraps w some vegan cheese then baked ! So easy and delicious, espec when eaten with extra salsa and guac. I made these when I first became a vegan (they feature in my second ever post) and they are still amazing!🥑 // I tried @violife_foods cheese for the first time after hearing mixed reviews and loved it! It doesn’t have the tang that i find other vegan cheeses have and while i’m late on the bandwagon, will deffo be having it again. Even the non-vegan boyf enjoyed and he’s fussy with vegan cheese! Just 3 ingredients 25-30 minutes I underestimated how much eggs I needed so actually requires 10 eggs for a medium sweet potato. - Easy instructions: 1. Heat oven up to 200c. 2. Peel the sweet potato, then grate the sweet potato. 3. Using muffin tray, lightly grease with the coconut oil. Add the grated sweet potato and pack down forming nests. 4. Put the muffin trays in oven and bake for 10 minutes. 5. Remove tray. Crack the eggs in the sweet potato nests. 6. Return the muffin tray in oven to cook the eggs until just set around 7-10mins. 7. Remove, allow to cool then serve. — This is a great breakfast meal prep which can make 2-3 servings depending on needs. Have a great weekend. Kad žmogaus organizmas toks adaptyvus, jog laikui bėgant turbūt tikrai galės misti šiandien mūsų kultūrai nesuvokiamas dalykais. Mane liūdina visi tie 'valgau tik kažką', 'nevalgau to ir to', 'šita mityba teisingesnė už aną' žmonės. Per savo neilgą amžių mačiau tiek žmonių, kurie mušę krūtinėn apie žalio maisto naudą, šiandien kapoja šašlyką ar bent jau žuvį, o užkietėję vištiena+ryžiai gerbėjai atrado vegetariškus/veganiškus skonius. Mačiau ir tų, kurie jau prieš kelerius metus, dar be jokių madų vėjų, kalbėjo apie privalumus valgant tik gyvulinį maistą, ir mačiau tų, kurie sėkmingai iškeitė jį į gana radikalią žaliavalgystę. Mačiau ir matau tuos, kurie nemirktelėję gali pasakyti, kiek kokių medžiagų turi cepelinas. Dar yra netoleruojantieji, emociniai valgytojai, atsidavę sportui, overpriced healthy (?) food pirkėjai (prie tų lentynų ir aš stoviu daugiausiai:), senos geros "mano baba taip valgė ir gyveno devym metų" mitybos gerbėjai, pavasariniai pienių ir dilgėlių rinkėjai, aršūs augalinės mitybos kritikai ir dar daug kitų. Man tenka laimė pažinti daug įvairiai besimaitinančių žmonių. Ir žinot ką? Jiems visiems viskas OK. Turiu per dvidešimt metų neblogai išlavintą gebėjimą negirdėti tų, kurie apie maistą ima kalbėti kategoriškai. Jaučiu, kad tai jiems patiems reikia sau įrodyti tas žinias. Šiandien apie maistą sakau tik vieną pastebėjimą - būtent jis lemia, kaip jaučiatės, bet dažnai tiesiog priprantam jaustis vidutiniškai. Kas tai bebūtų, maistas turi suteikti jums ilgalaikės energijos, leisti gyventi taip, kaip norite, - su jėgomis nuo pat ryto, be nuotaikų svyravimų ir be sunkumo jausmo pavalgius, be baisaus alkio ir balso galvoje 'nu tai ką čia dar pagriebus'. Kartais susimąstau, kaip turi jaustis žmogus, kuris pavalgo dienos pietus iš bala žino ko ir iškart jaučiasi mieguistas? Ar tai normalu? Kaip turi jaustis žmogus, kuris sunkiai keliasi, nuo pat ryto neturi jėgų, dažnai serga, yra blogos nuotaikos ir neklausia savęs, ar tai ne dėl to, kas jo lėkštėje? (Tęsinys - komentaruose)

Eén van mijn favoriete ontbijtjes is een geroosterd broodje met avocado met wat peper en zout erop. 🥑 Vaak doe ik er dan nog wat veldsla op en wat kiemgroenten. Dit keer maakte ik het met mijn zelf gekweekte tomaatjes! 🍅🍅 Mijn tomatenplant staat volgens mij al een jaar in mijn kamer en sinds een paar maanden beginnen er eindelijk tomaatjes aan te groeien.
