14 days Vegan Update... * So, it’s been 2 weeks of no meat, fish or dairy and it’s been an incredibly interesting experiment. * Sleep quality has improved, digestion has improved, I’m not bloated, feel heavy and I have bags more energy. I didn’t expect any of this. I’m also leaner but 0.5kg heavier coming in at 84kg (I’m sure no one cares what I weigh but 🤷🏻‍♂️) * The IVF nutritionist is delighted that I’ve cut out dairy and meat from my diet but would like me to continue with small amounts of fish and eggs in the run up to our next cycle. So I will and then perhaps cut them out again. * What’s amazing is that I’ve fully come to the conclusion that there is no reason to eat meat (for me, I totally understand why you’d want to eat meat - it’s delicious on a BBQ 🤪) and I can’t eat dairy as it make me a very unpleasant person to be around! Forget the muesli power bars guys. Oat cookies are the way to go. Alex's favourite post ride, my favourite just for life because they are delicious and I could eat about a thousand. ⠀ ⠀ 1 + 3/4 cups pecan halves⠀ 2 cups oats, divided⠀ 3/4 cup gluten-free all-purpose flour ⠀ 1/2 cup coconut or brown sugar⠀ 1 teaspoon baking soda⠀ 1/2 teaspoon cinnamon⠀ 1/2 teaspoon fine grain sea salt⠀ 1/2 cup pure maple syrup⠀ 3.5 tablespoons coconut oil⠀ 2 tablespoons almond milk⠀ 2 teaspoons pure vanilla extract⠀ heaping 1/3 cup pitted dates, diced⠀ 1/4 cup mini dark chocolate chips ⠀ ⠀ Preheat oven to 180 and line a baking sheet with baking paper. Toast pecans for about 9-11 minutes, until golden and fragrant. After toasting, remove from oven and cool for a few minutes. Add pecans into food processor along with 1 cup of oats and process until coarsely chopped with some fine powder. Be sure not to over process or the oils in the nuts will release.⠀ ⠀ In a large bowl, stir the pecan/oat mixture, the remaining 1 cup rolled oats, flour, coconut sugar, baking soda, cinnamon, and salt.⠀ ⠀ In a medium bowl, stir together the maple syrup, melted coconut oil, milk, and vanilla. Pour the wet mixture on the dry ingredients and stir until combined.⠀ ⠀ Fold the dates and chocolate chips into the dough.⠀ ⠀ Roll dough into cookies.⠀ ⠀ Bake for 12-13 minutes until the cookies are golden brown on the bottom. Remove from oven and let sit on baking sheet for 3-4 mins before placing cookies onto a cooling rack for 15 minutes. ⠀ ⠀ We eat straight from the freezer! Not sure why but they taste so good frozen. Unfortunately, on many fruit and veggies, even the organic ones, the residues of pesticides can be found. To minimalise the risk of consuming them with your food, you can wash your veggies and fruit in baking soda or white vinegar. In the video, I'm adding baking soda to a bowl of water with the veggies. Soak the produce for about 10-15 minutes and then rinse. The only unhealthy thing right now is you constantly cheating on your diet because its not structured. ➖ You can even use regular-calorie sauces, like I did here. This is kikkoman's teriyaki sauce. Do periods really need to be stressful? My answer is NO! They really don't. But when we're ill-prepared, stressed out & undernourished, your periods can easily become the worst time of your month (or even your existence). General cramping points to deficiencies in B complex & magnesium, so investing in good quality at your local health store/online goes a really long way. For extreme conditions such as really heavy bleeding even on day 4 onwards, fainting due to pain or feeling intense pain in back or thighs, it's really worth seeing a Medical Herbalist or your GP to explore further as these may point to some sort of cervical disorder or endometriosis. Otherwise, cut back on the sugar, increase a healthy varied diet & take deep breaths! Seriously, you're going to be okay!

Green bean and blood orange side dish! 💚👌🏽This is one delicious dish to make with a bag of beans! :: Cook prepared beans in salted boiling water for 5 mins. Strain and place on a plate. Add 2 cut up blood oranges, pepitas, hemp seeds, goats cheese. Dress with another orange sqeezed, olive oil, butter, and some of the goats cheese oil 🤤👌🏽 We had this along side fish. So good and blood oranges are in season at the moment. Toen ik een salade ging eten van I ♡ salad op Koh Tao. Maarten had toen voedselvergiftiging dus ik ging even alleen op pad. Helaas had ik het de volgende dag ook te pakken (niet van deze salade btw). Hierdoor konden we maar twee dagen genieten van het eiland omdat we de andere twee dagen op bed lagen. Gelukkig zijn we er weer bovenop en was dat het het ergste wat we in die 5 weken Thailand hebben meegemaakt. Dat valt dus reuze mee! (zeker gezien we veel scooter hebben gereden en vrij veel toeristen met verband rondlopen)

Washing your fruits and vegetables is as simple as adding Apple cider vinegar to a bowl or sink with cold water and let your produce sit submerged for 10-15 minutes. The Apple cider vinegar removes the pesticides, leaving the water dirty; full of the bad stuff. You then rinse your produce, dry and store - Your health will thank me later 🍌 Brooke

I've just been enjoying my @mightybeelondon Bananito bar from the August @thevegankind subscription box. It's a solar dried banana covered in dark chocolate, and it is seriously delicious. The banana is chewy and has an almost toffee like mouth feel. I would definitely recommend you pick one up to try!
