The first weekend of our PDC course is over. The 1st day was spent going over the history, ethics & principles of permaculture and the state of the world and we had a tour of the 125 yr old Price Hill house we were at. I geeked out over how our teachers have studied with some of the permaculture "founders" and authors of books I've read. We learned how fossil fuels and eco destruction 6x are at the basis of so many of the world's problems. Other things resolidified some "disconnect from food" realizations that I've had recently which even I'm guilty of. The cob rocket mass heater upstairs was my favorite part of the house! I also loved the greywater system which is totally something we could start doing. Day 2 was a review and then we started learning about design process & methods. We finished with a tour of the Enright Urban Eco-Village, Imago Earth Center, community garden and CSA greenhouse. Thanks to my friend Beth for the 1st day pics of the heater and foraged lunch-hen/chicken of the woods mushroom & squash soup and salad(i think it was sorrel that was my fave) with black walnuts and a side of homemade raw sauerkraut. The other pics from day 2 are the bark of a hackberry tree and some currant bushes and red cabbages growing at the corner of a busy intersection in town. Overall it was interesting to see how permaculture can be applied in so many aspects of life-socially, in businesses, etc not just gardening and farming. Next class in January is at Dater Montessori, can't wait!

When we make local dessert, we seldom miss coconuts 🥥 shave. Simple "kao tom" which is made of rice, sugar, coconut milk, peanut, black bean and banana boiled in banana leaves become even more palatable after coated with coconut. Anyone has idea for me? 💡 💡 💡 DIY experiment to make chalk. I don't want to buy "plaster of Paris". I want to use all ingredients that is common and available in kitchen, like corn starch, wheat flour, rice flour etc. I mixed different compositions of flour with water to make a dough and let them dry, then try to hold and write on wood board. But all these batch in the photo failed. All crumbled easily into chunks when I press them on the wood board, can make some stain but not for writing. Not possible to use for teaching. How to make the chalk harder and possible to hold in hand to write without breaking apart? After this will try eggshells chalk. #diychalk #experiment #needideas #ediblechalk #catatemychalk

Thung Chang is a peaceful and simple town. After 7pm you can always driving alone and enjoy the big road, often you can't see other cars. Most of the locals stay in house in the evening and sleep before 8pm. At 3am they start their daily routine. Go to the forest for buffalo, mushroom foraging, collecting jungle vegetables, takecare their field or garden, and after lunch when the sun is high and hot, they rest and continue with indoor tasks . When they have something extra like rice, fish, bamboo, garlic, Pamelo, coconut, papaya etc etc. they always want to share with you. It is an amazing place as we can plant almost all tropical fruits, from durian to mandarin to rambutan and many more. Everyone has plants of food around their house. Everyone is happy with their abundance, no robbery or snatch thieves. I love this place for the people here do most of the things with their own hands, buy as less as possible, and their community bond is very strong, everyone knows everyone. If you have any issue like your son won lottery, you build a new kitchen, your pig are giving birth, or your dog is dead, everyone in the village will know. 😂 🤣 In our heart we hope this place can keep her own style and never be touristic. Everyone loves handmade. I love mother knitting, love grandma pie, love father s cooking .....Sometimes handmade can be simple but can also be not easy, the process can take time, energy and determination to complete. But the outcome is rewarding and worth to feel its quality. A lot of love and feeling inside. In Thungchang, our friend owns a small weaving factory. From planting cotton to extracting natural color for dyeing to making patterns to weaving to selling and many other process, she has few locals in the village helping when they have "free time". So the production is not very fast, and she is enthusiastic with everything she is doing. Our volunteers love visiting this place. When her cloth is sent to Bangkok and Chiang Mai, the price become double or triple! The most interesting part is she share the same vision with us, to keep the traditional knowledge and insight on natural as much as possible. Beside her little factory is a food forest with cotton, plants that can use for coloring, teakwood, bamboo, and food. Not much youngster wants to learn this technique anymore, and perhaps one day when we can only buy cloth made by factory machine, we start missing all the handmade. #handmadelove #lovehandmade #organiccotton #sahainan #cottonweaving

It works!! It works!! It worksss!!! And most importantly, it was so delicious 😋! "I am not sure 🤔 my instant oven can cook a pie" "If you can cook a bread, you should able to cook a pie " "Ok let s do it!" We made a French Vegetable Pie 🥧 out of the "instant oven" that I made. So simple and useful! And the pie came out just perfect,not burnt, cooked well, crunchy crust, juicy filling! Plus the taste of olive oil.....yummmm~~ Thankyou Agathe! We use coconut cream 🥥 that we made from scratch, some eggplants, beans, vegetables from farm, and eggs 🥚 from the chickens. Seed saving is one of the most crucial role in food production, it is the end and also the beginning of the plants. The mother plants put their hope and energy onto the babies for ensuring their next generation continue. Our ancestors have chosen the plants which is nutritious and nice to eat for us. And we have to continue this responsibility to ensure the food security on earth. Seed harvesting is a normal job in Sahainan, we try to keep the seed of all crops, replant them, and share them. It is rice harvesting season at Northern Thailand. Community help exchange is normal for the local people here so they will take turn to help friends or relatives, in return, friends or relatives will come to help you. With this, they never need to hire workers even each of them have big area of rice field. They exchange the help for planting, harvesting, threshing, then planting onion and garlic, looking after buffalo, building houses and etc. it is a best way for knowledge exchange, even a perfect way to share our knowledge to the younger generation, if the youngsters are involved in the activities too. Money are not so important anymore if they have more than enough rice for whole family whole year, chickens around houses and vegetables around their fences. 🙉First solo me-time since Lulu came out of the womb! I may start working again soon so this is her first practice hour of being looked after! During this hour I am digging deep again into #GaiasGarden #permaculture book for the 2nd time. My mind has been less foggy and exhausted lately (not that she’s sleeping more at night... We often receive gift or souvenir from our volunteers or students. 90%of them are food or ingredients for cooking which we really appreciate!! Organic green tea 🍵 , olive oil, cooking herbs and spices 🥘, chocolate 🍫 , seeds, jams, cheeses 🧀 etc. Thankyou everyone. We cannot travel around the world but we are lucky to try many things from many different places!
