🥕🥕🥕Muffin de cenoura com gotas de chocolate, sem leite, sem farinha (com farelo de aveia)! Nutritivos, deliciosos e super fofinhos!🥰 Ingredientes: 2 ovos 2 cenouras (usei 1 media e 1 pequena mas não pesei🤦🏻‍♀️) 1/4 xic azeite (o sabor nao aparece! Pode fazer com oleo de coco também) 1/2 xic açúcar (usei mascavo orgânico)+ 3 col sopa xylitol (ou outro adoçante, ou aumente o açúcar. Gosto de combinar os 2 assim dá pra usar menos açúcar e ao mesmo tempo fica sem sabor residual de adoçante) 1 e 1/2 xic farelo de aveia 1 col sopa fermento em pó 1 col cha canela (opcional) Pitada de sal Gotas de chocolate 70% a gosto. Modo de preparo: Bata o farelo de aveia no liquidificador até ficar como uma farinha. Peneire em un bowl. Misture o fermento e a pitada de sal e canela. Reserve. Bata bem no liquidificador todos os ingredientes restantes. Coloque o creme no bowl com os secos. Misture. Acrescente as gotas de chocolate. Coloque a massa em forminhas de muffin. Finalize con mais algumas gotas de chocolate. Asse em forno preaquecido a 180 graus até que, ao espetar o palito ele saia limpo. Otima opção pra lancheira das crianças! Podem ser congelados. Rendeu 11 unidades! 😉 Obs: Para crianças até 2 anos recomenda-se não usar açúcar e adoçante. Para adoçar receitas priorize o uso de frutas secas como tamara e uva passa e frutas frescas como maçã e banana. Após os 2 anos, tanto açucares quanto adoçantes naturais podem ser utilizados considerando Bom senso, equilibrio e moderação. Yesterday I facilitated another fantastic cooking skills/nutrition workshop @ahdh support group Dundee for the Transition to Work - Cook, Eat & Be Healthy Programme. We made homemade burgers 🍔 & wedges! The feedback provided by the young ones was very positive. At first the kids weren’t sure as they didn’t think they would like the vegetables in the burgers. There’s nothing more important than a wholesome nutritious breakfast, that tastes good, looks good and you can make it from the night before and store it in the fridge for a few days.  You can eat it warm and cold and you can adjust it to your preferences as you like 😍 Anyway enough of the jibber jabber, let’s get to the point. ✔️Buckwheat : Low in calories and high in quality protein that is present in buckwheat aids in reduction of bad cholesterol and better control of blood sugars and insulin. Also magnesium which is a mineral present in this grain has a very important role in maintaining healthy bones, muscles and teeth. Lastly but still very important, high in antioxidants and flavonoids buckwheat has a protective role in skin aging and works as a natural suntan lotion creating a protective layer on the skin from the sun. Anyhow, buckwheat can be incorporated in your diet in a lot of ways such as mixing in salads, yogurt, porridge and soups. 📃For the above recipe I have used: 200g Buckwheat, 4 tbsp flaxseeds, 2 tbsp chia seeds, 3 medium apples, cinnamon & nutmeg to taste, roasted almonds, Stevia sweetener to taste and 3 mugs of unsweetened coconut milk) 💡Full recipe and video will soon be on the blog.

Sichuan spicy wontons 🥟 • Make the chilli sauce 1/4 cup tamari soy sauce 6 tbsp homemade Sichuan chilli oil (find the recipe on blog) Salt to taste Combine all ingredients and mix well. . • Wonton wrappers 2 cups organic white flour 1 cup boiling water Pinch of salt 2 tbsp cornstarch for rolling In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 20 mins. Lightly dust your counter-top with cornstarch, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. . • Filling 1/2 block of firm tofu, drained & crumbled 200g mushrooms, diced 1 tbsp minced ginger 3 clove minced garlic 1 medium onion, diced 1 cup spring onion, chopped 2 tsp peppers 1/2 tsp salt 2 tbsp sesame oil • - In a large skillet over medium high heat, add sesame oil and cook ginger, garlic and onion until fragrant. Add mushrooms and cook until the liquid released. Add tofu, peppers, salt stir-fry for another 2-3 mins. Then add the spring onion and mix well. . - To make the wontons, take a wrapper, and add filling. Use your finger to coat the edges with a little water. Fold the wrapper in half into a rectangle, and press the two sides together so you get a firm seal. How much did I enjoy this dinner? Lots! 💫 Leftover wholemeal pasta in pesto sauce and eggplant, and cutlets with a slice of the zucchini bread and yoghurt dip I made today.
