Walking was harder than running believe it or not. We average between 35,000 - 45,000 steps each day. We walked a total of 82 miles over 4 days. Most will continue to Santiago and then to the End of the Earth a total of 500 miles over the course of 5 weeks. What an incredible journey/ pilgrimage. Cashew Indian Curry with Roti This is a weeknight recipe. I admit the picture could have been a bit better but what it lacks in aesthetics I promise you it makes up in taste and health. For the rotis I used Mission Whole Wheat Tortillas . Each is 45 calories each and is high in fiber. Obviously rotis made from scratch are much more nutritious and is anyway recommended more than these but if you're juggling too many things at a time and are hell tired on a Tuesday night, and want something quick and easy, these come to the rescue. Cashew Chicken Recipe NET CALORIES: 400 Servings : 4 I used Organic Grass Fed chicken but you can substitute it with any protein of your choice/ Organic Tofu and Paneer are good options for vegetarians . Prep Time : 30 min Marinate the chicken with yoghurt, red chilli powder, turmeric, lemon ,.Salt, olive oil and put it in the pressure cooker with a bit of water and wait for atleast 4 whistles. I usually pressure cook chicken to ensure it is absolutely soft. Meanwhile prepare a paste of cashews (5-6) , fresh ginger, garlic, vinegar, raisins(6-7). In a pan heat about two teaspoons of olive oil, and fry the paste evenly till oil starts oozing out. You'll notice that the chicken in the pressure cooker has released a lot of water. Add the chicken along with the water into this pan. Cook on high heat for 10-15 minutes. I have been eating fruits for breakfast for the past 6months or more, but I did eat my own marinated ginger and limes for longer than that time. Every day I have one banana and ginger for sure and the other fruits depends on what I have, sometimes I eat peach or avocado along with banana and ginger. I must said knock on wood that so far I never had any sickness , flu or cold for years, considering my daily life interact with little kids. If there's one thing I've learned during this internship it's that taking care of yourself is so important. What does taking care of YOURSELF mean to YOU? You guys, it's different for everyone. When I say that, do you automatically think about your appearance? "Well taking care of myself means losing weight. Or eating certain foods." Which can all be good things, don't get me wrong. But listen. When you stop focusing on how you look, and start focusing on listening to your body, good things happen. When you stop categorizing foods as "good" and "bad" your relationship with food becomes nontoxic and genuinely freeing. What does taking care of yourself mean? Stop thinking about what the world would say, and start thinking about what you need. Also, this is a picture of my favorite snack lately: berries and yogurt. 😋

My easy #Delicious alternative to cholesterol free ice cream but has sorbet texture. For a serving, I Blended 2 tbsp organic Peanut butter, a banana, and vanilla sweetened soy milk. if preferred, use unsweetened soy milk, or almond milk or yogurt. Put in bowl and freeze for 60 minutes and add sliced strawberries if desired. 2nd pic is a smoothie with same ingredients, I do this smoothie as breakfast meal for the fam. It’s a creamy satisfying yummy combo. I also do this w strawberries and soy milk or other fruits without Peanut butter for a fruit only sorbet. #nutritious #desserts
