New Recipe: Tuna Salad Sandwiches
Some people might like a simple tuna sandwich, but we are not 'some people.' This sandwich is packed full of delicious textures and flavors and will make you excited to make lunch every day!
You will need:
1 x 160g tin of tuna in spring water, drained
8 green olives, finely diced
½ red pepper, de-seeded and very finely diced
1 teaspoon minced garlic
¼ teaspoon dried parsley
Pinch of freshly ground black pepper
2 tablespoons lemon juice
½ cup (125ml) Greek yoghurt
6 slices of bread
Unsalted butter, for spreading
In a large bowl, mix together all of the ingredients, except the bread and butter - reserve
Butter each slice of bread on one side
Evenly divide the tuna filling between three slices of the bread, then finally close the sandwiches with the remaining three slices of bread
For younger babies, serve in soldiers; older babies who are developing, or have mastered, a pincer grip will enjoy this served in small squares.
Store any leftover filling in the fridge for up to 3 days.
