Eggplant & Fennel Paella ๐Ÿ†๐Ÿฅ˜โœจ๐ŸŒฑ INGRREDIENTS: 1 bulb Sarinaโ€™s fennel, 1 eggplant, 1 green zucchini, 1 red capsicum, 1 Sarinaโ€™s brown onion, 300gm paella rice, 1 pinch of saffron if you have some, 1 tspn smoked paprika, 1 handful of parsley, 1 lemon, 1 handful of green beans, olive oil, 1 cup dry white wine (or extra stock), 2 tubs Jettyโ€™s vegie stock (defrosted & warm). METHOD: Preheat oven 200d. In a paella (or heavy based pan) sautรฉ the cut veg in a little oil for 10mins then add rice paprika saffron & cook whilst string for approx. 5 min then add the wine, reduce to half liquid then add half stock, simmer another 10mins then add rest stock. Place the beans and roasted veg on top& the lemon wedges.
