Eggplant & Fennel Paella 🍆🥘✨🌱 INGRREDIENTS: 1 bulb Sarina’s fennel, 1 eggplant, 1 green zucchini, 1 red capsicum, 1 Sarina’s brown onion, 300gm paella rice, 1 pinch of saffron if you have some, 1 tspn smoked paprika, 1 handful of parsley, 1 lemon, 1 handful of green beans, olive oil, 1 cup dry white wine (or extra stock), 2 tubs Jetty’s vegie stock (defrosted & warm). METHOD: Preheat oven 200d. In a paella (or heavy based pan) sauté the cut veg in a little oil for 10mins then add rice paprika saffron & cook whilst string for approx. 5 min then add the wine, reduce to half liquid then add half stock, simmer another 10mins then add rest stock. Place the beans and roasted veg on top& the lemon wedges. Roasted Turnip with a twist 4 Fleurieu grown turnips peeled & quartered, 6 Adelaide Hills grown organic carrots peeled & sliced about 1cm thick, a generous knob of ginger peeled & cut into thin little batons, 4 big of dollops of Grant’s Lady Bay honey, ½ bunch of Mr Luong’s coriander, a tablespoon of sesame seeds, a dash of olive oil, salt & pepper to season. Mix all (except the sesame seeds) together & place in an open oven tray & bake at 200dc until tender. Garnish with sesame seeds & a sprinkling of fresh coriander. TILLY’S COOKING Rainbow Chard & Swiss Mushroom Sauté 1 bunch Phil’s rainbow chard, a handful of swiss brown mushrooms, 1 of Sarina’s brown onion, ½ cup raisins, 1 tablespoons pine nuts, 1 clove of Richard’s garlic, lemon juice, salt & pepper, olive oil. Rinse & finely chop the chard (chopping stems separately). Heat some oil in frypan & sauté onions, garlic until soft then add the chard stems & mushrooms until almost cooked then the leaves until wilted. Remove from heat & stir raisins through. Garnish with lemon juice, salt & pepper & garnish with pine nuts. Roasted Asian style Brussel Sprouts 🥦💚✨🥗🍱🌱 350 gm Adelaide Hills Brussel sprouts, plus for garnish: ½ bunch Phil’s spring onion chopped including green, ½ bunch Mr Luong’s coriander, For Sauce: 2 cloves Richard’s garlic minced, 1cm piece fresh ginger finely chopped, 2 tbsp. soy sauce/GF Tamari, 2 tbsp. honey/maple syrup, 1 tbsp. rice vinegar, 2 teaspoon sesame oil, 1-2 tablespoons Asian chilli sauce (e.g. sriracha). A dash of olive/peanut/coconut oil for frying. Preheat oven to 200 DC, trim and halve the sprouts lengthwise, toss in the oil then place on baking tray (lined with baking paper pref.) Roast sprouts for approx. 25 mins until tender & edges coloured. Prepare sauce in saucepan by gently heating until sauce is hot and flavours blended. Vegan Palek Paneer 1 Sarina’s brown onion diced, 1 bunch Phil’s Chard shredded, 2 Vince’s Roma Tomatoes diced 1 tbsp ginger, 2 cloves garlic minced, 1 tbsp coconut oil, 1/3 cup coconut cream. Spice blend of: ½ tsp cumin seeds, ½ tsp ground coriander, ¼ tsp turmeric powder, ¾ tsp garam masala, 1 bay leaf, pinch cayenne pepper, ½ tsp salt. 1 pack of fresh tofu. Bring a saucepan of water to boil then quickly blanch & drain spinach, cool it then vitamize it. Empty saucepan then add oil, heat & add spices After a minute or so add garlic, ginger, onions then tomatoes. Cook for a further few minutes, add the coconut cream & spinach and warm through. I find the experience of shopping in a supermarket overwhelming to my senses. I feel anxious and want to get out of there as soon as possible.
