Just in - fresh, local tomatillos! For the perfect roasted tomatillo salsa, broil 5 serrano chiles, 3 cloves of garlic, and 1 1/2 pounds of fresh tomatillos (husks removed) on rack of a broiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred (about 7 minutes). Peel garlic and pull off tops of chiles. Purée all ingredients in a blender, including 1/2 cup of cilantro, 1 onion coursely chopped, and 2 tsps of course salt, and you have the tastiest homemade salsa verde!
