Wake with the dawn- the most Sattvic time of day. . Sit in darkness and plant your seeds. Just like the darkness within the soil. A lot of work can be done in the dark. And just as the sun rises our seeds sprout over time. . . The first thing I say when I wake is - thank you. . . Thank you for this body. Today is a new day. My love for Varanasi runs deep- there is something magnetic about this sacred place that literally pulses through my being- it’s truly has a special place in my heart. . . This is the owner of The Blue Lassi Shop he is seated where is father before him sat serving lassi- it is situated in the old city , down some small alleys leading to Manitkarnika Ghat. Its literally a small room where the walls are lined with passport photos of past tourists. The Blue lassi shop has been making lassi recipes for over three generations. The process involves no blenders or fancy equipment- just what you see in the photo. Oh and the large slab of ice that is delivered by the ice wallah every day. Modern lassis are blended but here the spices are crushed by hand and “whisked or churned “ using a wooden stick in a steel handi (utensil) - this process takes the heaviness quality of takra or buttermilk to light. . . The lassi is served in a unfired clay bowl - when you are done your beverage the clay is smashed into a bucket to be reclaimed and made into new vessels. . . What I loved about visiting this shop almost daily was watching the simple but meditative process of a lassi being made in the the centre of the narrow and crowded street in all the hustle and bustle- I love the history and the tradition. . . Below is a recipe for takra - a digestive lassi . . traditionally whole raw fermented milk yogurt is used - if you can find that and it also comes from ahimsa practices use that- but most of us don’t have access to that. So you can substitute with fresh raw almond milk yogurt or coconut yogurt . . 1 cup room temp water 1/4 cup yogurt 1/4 tsp cumin seeds roasted and ground into powder 1 inch fresh ginger 1/2 cup fresh cilantro Dash pink Himalayan salt . Boil water and let cool to room temp - doing so shifts the heavy quality of water to a lighter one. Place all ingredients into bowl and whisk for a few minutes until smooth and frothy. . .
