Melanie walking the pastures with Caleb, of @FoglineFarm. You know, the farm you see on the labels of our Golden Bone Broth, Sesame Chicken Salad, and this week’s Italian Sausage Ragu Zoodle dish (to name a few)!
On a foggy day last month, Caleb gave us an hour, or so, of his time to show us around the farm, and share details of their pasture-raised poultry farming practices. Let me say, in a global industrial food system that is opaque and disconnected from consumers, the transparency offered by local farmers is revolutionary.
It’s empowering to meet the person growing your food.
To eat meat with the confidence of knowing that the animal you are eating has lived a healthy life with a varied and natural diet.
To see the health of the land when the natural cycles of regeneration are respected.
To learn how pasturing animals responsibly helps build fertile soil.
To know exactly what you’re putting into your body and what you’re supporting with your dollars.
These practices not only impact the chickens and the land, but also the flavor of the meat and its nutritional value. For chefs, the quality of ingredients is our greatest tool for creating a mouthwatering dish. As far as chicken goes, it doesn’t get any better than Fogline Farm.
If you missed it in our stories, you can see our tour of the farm saved in the Highlight section.
