I love this time of year! Things are cold, dark and damp but makes it all the more perfect to get cosy at home with broths and books. .
To celebrate mushroom season and #FungiFest2019 Here is a warming, seasonal recipe foraged or shop bought mushrooms and mixing with an asian twist from our latest book, The Herbal Remedy Handbook (📖Kyle Books, 2019). Best of all, it's #vegan !
VEGAN MUSHROOM BROTH
This vegan ‘bone’ broth uses shiitake mushrooms, high in healing minerals such as potassium,
magnesium and zinc, as well as immune-boosting beta-glucans. Serves 4.
200g (7oz) shiitake or a mix of other speciality
mushrooms, such as oyster enoki and
1 strip of kombu seaweed
30g (1 oz) wakame seaweed
2 handfuls of fresh or 1 handful
of dried nettle leaves
2 litres (3½ pints) water
1 large onion, chopped
3 large cloves garlic crushed and sliced
2 carrots, sliced
3 celery sticks, chopped
1–2 tablespoons soy sauce
100g (3½ oz) vermicelli noodles
1 chilli, sliced
lime wedges, to serve
2 spring onions, sliced, to serve
few coriander sprigs, to serve.
Place the mushrooms, seaweeds and nettles in a large saucepan and pour over the water. Bring to the boil and then reduce to a gentle simmer, covered, for 1–2 hours, adding more water if necessary. Strain out the nettle leaves. Add the onion, garlic, carrots, celery sticks and soy sauce and simmer for a further 5-10 minutes. You can then strain the solids out and drink this broth alone or add to soups, stews or risottos. For a tasty noodle soup option, don't strain the vegetables out, add the noodles and cook as per instructions then garnish with sliced chilli, spring onions, coriander and lime wedges.
SHELF LIFE Keep in the fridge for up to 3 days, or in the
freezer for up to 6 months.
