It’s a COLD and dreary day and a good hot lunch sounded so good. Lots of good options, but I decided to be a responsible adult and choose the most nutrient dense option 😁 All gluten free, grass fed, pastured, and organic from my fav locally owned restaurant. . Steamed broccoli, grass fed beef liver and onions, cauliflower rice, and a side salad. #nutrientpowerhouse . And before you frown up at the liver, remember that our ancestors ate all parts of the animal and vegetables they grew and they didn’t have any of diseases, cancers, and health conditions we have today. They were doing something right! . Here’s the nutrients I got today: A 3.5 ounce serving of beef liver contains a powerhouse of nutrition. 3,460% of the RDI of Vit B 12, 860–1,100% of the RDI of Vitamin A, 210–260% of the RDI of Riboflavin, 65% of the RDI of Folate, 80% of the daily value of Iron. . Broccoli is a great source of nutrition. Contains Vitamins A, C, K and folate as well as calcium, iron, magnesium, potassium, zinc, manganese and selenium. In fact, broccoli has a whopping 135 percent of your daily value of vitamin C and 116 percent of the daily value of vitamin K per serving. (Vitamin C is a strong antioxidant for cellular health; vitamin K helps regulate calcium and bone formation process).
