Chickpea & mushroom stuffed courgette 🍅 You'll need: • 1 courgette • 2-3 mushrooms • 3-4 cloves of garlic • 200 g tomato passata • 100 g tinned, drained chickpeas • few tbs. of olive oil Method: Preheat oven to 160°. Half and grave the courgette, brush a tray with some oil and place the courgette halves in it. Chop the garlic and mushrooms and fry them slightly in a pan using some olive oil, on medium heat. Once they're mostly cooked add the chickpeas and tomato passata and bring it to the boil. Put it on the side and add some seasoning (oregano and basil), salt & pepper. Spoon the mixture into the craved courgette halves and place it in the oven for about 15-20 minutes, until the courgette is thoroughly cooked and tender.
