How about a good nutritious ramen for a lunch? 😉This one is looking really delicious, isn’t it?🥰
I really love cooking a hearty miso soup during the winter season and use therefore an adjusted recipe from Amy Chaplin’s cookbook „At home in the whole food kitchen“: 🍲 Winter Miso Soup:
100 g adzuki beans,
2 l water,
some shiitake mushrooms (dried and fresh),
1 onion thinly sliced,
1-2 carrots thinly sliced,
300 g winter squash cut in small dice,
100 g Chinese cabbage thinly sliced,
2 table spoons dried wakame,
4 table spoons dark miso,
3 table spoons chickpea (or white) miso,
asian noodles (I use the organic thin buckwheat sweet potato noodles),
some spring onions thinly sliced and black sesame seeds to garnish.
Cook adzuki beans with dried shiitake for approx. 35 minutes until they are soft, then set them aside.
Warm sesame oil in a large pan, add onions, stir in carrots and squash and cook for a couple of minutes. Add adzuki beans and their cooking liquid, bring to the boil over high heat. Cover pan, reduce heat to low and simmer for about 10 minutes. Stir in Chinese cabbage and simmer for 1 minute. Dissolve and prepare misos with water and wakame. In a separate pan fry fresh shiitake mushrooms with some onions until they are soft (about 10 minutes). Cook 2-3 eggs about 8 minutes.
Serve soup (miso and vegetables) into bowls garnished with fried shiitake, halved hard-boiled eggs, sliced spring onions and black sesame seeds.
