Last night's supper was steamed artichoke with garlic butter (that white stuff in the cup is butter), cream fiesta corn, and mushroom rice. Really basic stuff that took me less than half an hour to make start to finish. The mushroom rice is like what you find in those packs of flavored rice in the store but so much better. It's 1 cup of rice, 2 cups of vegetable stock, small onion, a pack of mushrooms, garlic, and green onion to garnish. Sautee onions until translucent or you can go as far as caramelizing them. Add garlic. Add mushrooms. Cook this for a few minutes. Then add the rice and stock. Stir and bring to a boil. Reduce to simmer and cover. Simmer for 15 minutes. Do NOT open the pot until the timer goes off. I repeat, do not screw up your rice by being impatient. Garnish with chopped green onion.
