What did I do today as I worked from home?? Well I baked GF muffins of course 🤤🤤 ... but really got SOOOOO much done over the last two days & I’m trying to do more things that I love, even if they’re small, but doing them EVERYDAY to keep manifesting a happy, healthy & fulfilled life♥️🙌🏻 One of the most joyful things I love to do is COOK!! I love trying new recipes and getting creative in the kitchen 👩🏼‍🍳👩🏼‍🍳👩🏼‍🍳 • • • Recipe inspired by one of my fav IG pages @calorieshealth ✨✨ EASY | DELICIOUS | Gluten Free | Protein Packed | And an easy way to use up some very ripe bananas😍🍌 Recipe Below⬇️ BANANA CHOCOLATE CHIP MUFFINS🍪🍌🧁 Ingredients: ▪️2 Ripe Bananas ▪️2 tsp of vanilla ▪️1/2 tsp of baking powder ▪️2 egg whites ▪️2 tbsp of organic honey ▪️1 cup of peanut butter ▪️Semi sweet vegan chocolate chips! Mix all ingredients together in a blender or food processor except the chocolate chips! Poor into muffin pan and sprinkle 4 chocolate chips on the top of each muffin! These muffins are about 70-100 calories each - depending on if you use whole egg vs egg whites or a different variation of peanut butter! • • Bake in oven at 400 degrees for 10-12 minutes (she stated 8 minutes but I felt like they needed a few extra minutes!) Not sure if you've been following my squash adventures but both squashes came out amazing! 1️⃣Roasted butternut squash with olive oil, sea salt & pepper, with thyme. 450°F for 40-45mins 2️⃣Roasted pink banana squash with olive oil, sea salt & pepper, with rosemary. 350°F for about 45 mins. We cranked up the heat to 400°F for the last 15 mins. #SquashAdventures #wintersquash #butternutsquash #pinkbananasquash
