UN ALMUERZO De LOS MiOs By #thefancymachine #inthahouse ...................................... D E S C R I P C I O N • filet mignon . Sous bidé • Croata de tocineta • Pate de champignon • Zanahorias y cebollas glaze • Papas confitadas en mantequilla clarificada • Vegetales salteados E L C U E N T O . . . Tan cotizado como el tequeño en una fiesta. El Famoso “Filet mignon” ; lomito, envuelto en tocineta y pinchado con un mondadientes , puesto a la brasa o si el evento es muy grande, los “lanzan a freír” ... no lo critico ! A mi me gusta encanta .. sin guasacaca... preferiblemente ! En cocina clásica, hablan del filet mignon como el corte del lomito del extremo superior, un triángulo muy blando de carne, pieza extremadamente costosa por ser una única porción por lomito !. ..envuelta en tocino o lardo ... y cocida en una sartén con mantequilla y junto a la grasa que lo recubren, se va haciendo como si fuese un magret Que hice yo ; tomé ese mismo triangulito (salmuera 45 min ) lo coloqué en una bolsa con mantequilla clarificada + estragón + un diente de ajo + pimienta entera y semillas de mostaza ... vacío y sous vide ! Faltando unos grados para llegar al punto, Parás la cocción. Un pate de champiñones (cómo si fuese una Duxelle) se envuelve y por último, tocineta. ... bordes crujientes y rosado el interno, ese crunch es gracias a la mantequilla de cocción de la pieza. Guarnición ; una reducción de jugo de res ; zanahorias bb, cebollas bb (mitades ) GLASEADO PERFECTO ... cuando estén blandas las cebollas se sellan por el lado de las capas . Belleza pura comestible. Esa mantequilla no se debe perder por eso unas papas confitadas ahí, son el almidón idóneo ... sal de sani.. divinas! Y por último unos petit polis y guisantes chinos salteados en oliva y ajo sencillo solo para dar un toque verde fresco crunch . Salsa? ... servidas en salseras para que cada quien escoja cómo come su filet mignon ; un jugo de carne (no es un glace, ni un demi glace) y una holandesa :..

Aside from heaven in your mouth... it’s a New Orleans dish that created by chef Pierre Hilzim, founder of Kajun Kettle Foods, Inc. He created the dish and named it after his wife, Monica Davidson. The dish really hit it big at Jazz Fest 35 years ago, and has been a staple at the festival since then. Pictured is a photo I took at his Kajun Kettle Foods booth at Jazz Fest last year. The next photo is our version. The next best thing to live jazz and seeing Aerosmith at Jazz Fest this year was this delicious dish! The original recipe is guarded under lock and key, but we, along with some others such as Emeril, have tried it out. Come in and let us know what you think. As much as I love eating salmon, I hate the fishy smell in my kitchen [sometimes in my entire apartment] everytime I grill or broil it. If you’re like me, then you have to try poaching it! It’s so easy, healthy ( because you don’t use oil ) and super quick! ———————— What you’ll need ( for 2 salmon fillets) : -a 3 quart sauce pan -2/3 cup water -1/2 cup coconut aminos -1/4 cup lemon juice -1/2 bunch cilantro, chopped -1 tsp grated ginger Ginger -pinch of salt 1.Place all ingredients in the sauce pan ( except the salmon) and combine 2.Add the salmon fillets ( they should be covered up to 1/3) 3.Turn the heat on medium high and bring to a simmer. Once it starts simmering , immediately cover the pan with a lid and lower heat to low -medium 4.Continue to cook for about 10 minutes; it depends on the thickness of the salmon and how well cooked you like it 5.Remove the salmon from the pan and serve with whatever garnishes you like . I topped it with cilantro and sesame - mustard sauce from my previous salmon salad post .
